What Wood Should You Burn?
Use kiln-dried hardwood with a moisture content under 20 percent. Oak is the workhorse, it burns hot, long, and clean. Maple and beech behave similarly. Fruit woods like cherry, apple, and pecan burn slightly cooler but leave a sweeter aroma that suits a margherita well. Split your wood small, roughly 2 to 3 inches thick, so it catches fast and keeps the flame rolling across the dome.
Never burn softwoods such as pine, fir, or cedar. The resin produces heavy soot, coats the dome, and leaves an acrid taste on the crust. How to Size a Wood Fired Pizza Oven

More Than Pizza
Once the fire dies down, the dome holds usable heat for hours, this is retained-heat cooking, and it is where a wood fired oven earns its footprint. At 700°F roast a whole chicken or char vegetables.
