How to Size a Built-In Griddle for Your Island

Griddle sizing is driven by your island cutout, not by the griddle's advertised width. A "30-inch" griddle does not need a 30-inch hole – the trim flange overhangs the opening on all four sides. Across the models in this collection, the most common cutout for a 30-inch built-in griddle falls in the range of roughly 28½" to 29" wide by 16¾" deep by 5¾" high, though this varies meaningfully by brand. Always build to the spec sheet for your exact model, never to the nominal size.

• 16" – 24" (1 burner): A secondary surface for breakfast, side dishes, or a compact island. Shop 24-inch griddles.
• 28" – 32" (2 burners): The most popular size by a wide margin, and the one most island plans are drawn around. Shop 30-inch griddles.
• 36" – 42" (3 burners): Enough surface to hold three independent heat zones at once. Shop 36-inch griddles.
• 48" – 60" (4 burners): Entertaining and light commercial use. Shop 60-inch griddles.

Plate Thickness and Material: What Actually Matters

The cooking plate is the single component that separates a griddle you love from one you tolerate. Two specs drive it.

• Thickness (3mm vs. 6mm): A thicker plate stores more heat, so it recovers faster when you drop cold food onto it and holds a steadier temperature across a long cook. A 3mm plate heats up faster and costs less; a 6mm plate is the better choice if you cook in volume or want restaurant-style recovery between batches. Installation Requirements Before You Order

A built-in griddle is a permanent gas appliance, and getting these four things right before you buy prevents the most common and most expensive install mistakes.

• Combustible island construction: If your island is framed in wood or any other combustible material, most manufacturers require an insulated grill jacket to maintain safe clearances. This is a warranty condition, not a suggestion – confirm the requirement for your specific model.
• Fuel type: Griddles ship configured for either propane or natural gas and are not always field-convertible. Order the correct configuration up front. If you are still choosing, read natural gas vs. propane.
• Ventilation: Griddles produce significantly more grease-laden vapor than grilling on grates. Any covered, roofed, or partially enclosed installation needs a properly sized outdoor vent hood rated for the appliance width and BTU load.
